Here is what you’ll need:
- Boneless Skinless Chicken
- Plain Yogurt
- Lemon Juice
- Garam Masala
- Red Chili Powder
- Heavy Cream
- Tomato Ketchup
For the Marinade
combine Yogurt, Lemon Juice, Garlic, Ginger, Red Chili Powder, and the chicken in a bowl, cover and marinate for a minimum of 1 hour.
In a large Pan, add Butter and heat on high. Add chicken in batches, ensuring not to crowd the pan, and sear on all sides, creating a deep brown crust. When ready, remove with a slotted spoon and set aside.
For the Butter Chicken Sauce:
Using the same pan, melt the butter and add Onions, Ginger and Garlic, Tomatoes, Cashews, and Garam Masala. Stir, and scrape all the bits of spice leftover from frying the chicken in the pan.
Continue to cook until tomatoes reduce, and thicken ca. 15-20 minutes.
Grind to a smooth paste and grain it.
Add Butter in the pan, add Cinnamon, BayLaeve, Cloves, and Cardamon. Add the Puree, Salt, Sugar, and Tomato Ketchup and Coriander. Add the chicken and Heavy Cream. Let the mixture simmer for 5 minutes until chicken is cooked through.
Garnish with fresh Coriander Leaves and a drizzle of Heavy Cream.
Enjoy your Butter Chicken!
